A friend of mine has a boat and we recently took a fishing trip to Lake Erie. The weather was not the greatest, it went from cold to hot, one extreme to another. The fishing was fair. However, we did manage to catch a few good messes of Walleye. I have been frying it in a little olive oil and butter, with some garlic and lemon pepper. It has been amazing! It is hard to beat a good (fresh) Lake Erie Walleye filet.
I am not a guy that likes my fish battered. I think it takes away from the flavor. IMO, battering fish is for people that don't like fish. I guess its like the steak debate.

I love fish, I guess I am one of those that likes fish with a dip. I use cocktail sauce. I will take bites without it as well, just to enjoy the natural flavor of the fish, but I am one of those who likes the extra added flavor as well.
With steak, people get real weird about em. I have never understood it.

That sounds good catomic. I don't prefer it battered either. I grill trout or orange roughy or swordfish or whatever with some olive oil brushed on with salt and pepper a couple times a week. Healthy and tasty. Rarely do I see any walleye at the market for some reason, but I will ask for it next time.

I love fish, I guess I am one of those that likes fish with a dip. I use cocktail sauce. I will take bites without it as well, just to enjoy the natural flavor of the fish, but I am one of those who likes the extra added flavor as well. With steak, people get real weird about em. I have never understood it. I don't want to say there is a wrong or right way to eat it, it's all good either way.

We wanted to get into some yellow perch, but just couldn't find the big schools. If you can locate a good school of perch, a few guys can nearly fill a trash can in an hour.

I hear you, but I was talking on here one day about how I like to eat a steak and you would have thought I was awful because I like mine well done.

Medium okay I guess for kids ...... anyone that orders well done as should be banned from eating steak. T he fact you jerk all ur steak Eating it well done you should flog yourself daily. That is all.

Living on the Lake, I'm sure streeter enjoys fresh fish. Umm mm I live in a High rise on the lake in Wrigleyville ..... it'a not like I do an Andy griffin walk to the pier. I'm a total hack trying to fish anyway. Been a few times just never catch anything other than a deep sea trip years back ...... ended up throwing my rotar cuff that time. Fishing and me doesn't end well. I do love good fish tho. But mostly salt water fish like Tuna, sword, red snapper , Dover sole . . Etc. Nothing beats a good Toro Blue Fin sashimi.

That is all. I've never ordered a steak, nor will I start now. I've cooked em, and I prefer to eat them the way they taste good to me. I dont eat Sushi either, I like my fish cooked. I like my hamburger cooked as well as my bacon. The only way I know to eat steak is to ram it down my neck and then fire it out the other end later. If you like them rare, then eat em rare. It all ends up looking like a fat brown cigar just the same. Since you are looking out for the cow, try doing as the cow says on the sign they hold up... Eat more chicken

This Walleye sounds good, I will see if I can get some and try it. I like the use of Olive oil.
I find a good batter is using Ky Colonel mix with some hot pepper blended in. But the lemon pepper sounds good too.

Cover with lemon juice/olive oil mixture, a little salt, dill and bay seasoning Grill till it "flakes"--don't over cook Always have a small aluminum pan to load with wood chips(mesquite and hickory) and herbs(rosemary, thyme, sage, lavender, oregano, basil)---heat the grill HOT, and wait for the herbs and chips to begin to smoke--the aroma is wonderful-- then put on the delicacy and cook/smoke on both sides till it begins to flake--- BEST of the BEST!!!! rr
